Georgina Hayden served up a tasty Greek feast with meatballs bulgur wheat and tzatziki on this morning.
The ingredients for the tzatziki are: 1 cucumber, 1 tsp flaky sea salt , 1 small garlic clove, peeled, 1 tsp dried mint, plus extra to finish , Freshly ground black pepper, to taste, 500g Greek yoghurt , 2 tbsp extra virgin olive oil, plus extra for drizzling and Juice of ½ lemon.
For the Meatballs: 2 large potatoes, about 500–600g , 1 onion, ½ a bunch of flat-leaf parsley, 500g pork mince, 1 egg, ½ tsp baking powder, ½ tsp ground cinnamon, ½ tsp dried mint, ¼ tsp white pepper, Sea salt, to taste, 100g breadcrumbs, plus 2 slices of white bread and 1L vegetable oil.
For the Bulgur Wheat: 2 onions, 4 tomatoes, Olive oil, Sea salt and freshly ground black pepper, 150g vermicelli, 750ml stock (vegetable or chicken), 1 cinnamon stick and 200g bulgur wheat.
