Freddy Forster speedy pizza puffs with chicken, cheese and vegetables recipe

Freddy Forster served up tasty speedy pizza puffs with chicken, cheese and vegetables on Steph’s Packed Lunch.

The ingredients for the pizza dough are: 500g 00 flour, ¼ tsp of table salt, 10g caster sugar, 7g dried active yeast, 1 tbsp olive oil and 320ml warm water.

For the tomato dip: 1 clove of garlic, peeled and finely sliced, 75g onions, peeled and finely diced, 1 tin of plum peeled tomato, 50ml water, Pinch salt and Pinch caster sugar.

For the feta filling: 70g courgettes, very finely sliced, 70g feta cheese, crumbled, 2 tbsp of frozen peas, crushed and squeezed out the excess water, Few leaves of fresh basil, Zest of ½ lemon, Salt/Pepper and Pinch of dried oregano.

For the chicken filling: 45g button mushrooms, finely sliced, 50g chicken leg/thighs, pre-cooked and shredded, no skin, 65g cooked potato, baked or roasted and then crushed, 1 tbsp chopped chives, 1 tbsp mayonnaise and ¼ tsp English mustard.

To serve: 1 tbsp chives, chopped and 50g parmesan cheese, grated.
