Phil Vickery served up a tasty classic chicken soup with dumplings, leeks and mushrooms on this morning.
The ingredients are: 4 chicken thighs, bone in and skin off, 2 large onions, finely chopped, 1 medium leek, washed well and finely chopped, 200g white button mushrooms, washed well sliced, 700- 800 ml water, roughly, 300ml milk, 2 x crumbly chicken stock cubes , Ground pepper, to taste, Salt, to taste, 35g salted butter, softened and 30g plain flour.
For the dumplings: 225g minced chicken thigh, 1 small onion, very finely chopped, 1 clove garlic, finely chopped, 1 tbsp fresh ginger, finely chopped, 2 tbsp fresh parsley, chopped, 2 tbsp extra virgin olive oil, 1 medium egg white, Salt, to taste, Ground pepper, to taste and Cornflour, for dusting.
To finish: Extra virgin olive oil, for drizzling and Parsley, for sprinkling.
