James Martin Roast Pork with Cider Sauce, Apples, Mash Potatoes and Fried Sage recipe

James Martin served up a tasty slow Roasted Pork with Cider Sauce, Apples, Mash Potatoes and Fried Sage on James Martin’s Saturday Morning.

The ingredients are: 4kg middle white pork loin, scored, 1 tbsp sea salt, 1 tbsp fresh thyme, chopped, 2 bunches sage, leaves only and Veg oil for frying.

For the apples: 2 Bramley apples, peeled cored sliced, 75 ml cider, 2 tbsp brown sugar and Knob of butter.

For the sauce: 200ml veal jus, 150ml cider, 25g butter, Salt and pepper.

To serve: Mash.
