James Martin served up tasty cannelloni with manchego cheese on James Martin’s Spanish Adventure.
The ingredients for the sauce are: 1L milk, 1 bay leaf, 1 onion, sliced in ½ , 75g butter, 75g flour, Grating of nutmeg and Splash of Cognac, optional.
For the filling: 1 tsp salt, 1 tsp dried oregano, 500g pork mince, 500g beef mince, 300g small Cannelloni tubes and To finish, 50g of Manchego cheese, grated.
For the vegetables: 100ml olive oil, 1 aubergine sliced, 1 large courgette sliced, 3 peppers, cored removed and 15ml sherry vinegar.
