Shivi Ramoutar enchiladas with pork and spicy pickled pink onions recipe on Oti Mabuses Breakfast Show

Shivi Ramoutar and Oti Mabuse served up tasty enchiladas with pork and spicy pickled pink onions on Oti Mabuse’s Breakfast Show.

The ingredients are: 2 tbsp vegetable oil, 2 onions, peeled and roughly sliced, 2 large peppers (mix of red, orange and yellow), deseeded and thinly sliced, 2 large garlic cloves, crushed, 1 heaped tbsp ground cumin, 1 heaped tbsp dried oregano, 1 heaped tbsp smoked paprika, 1/2 – tsp chilli powder, 400g pork mince, 1 x 400g tin black beans (or kidney), drained, 8 tortilla wraps, 2-3 large handfuls of grated cheddar.

For the spicy pickled pink onion: 1 large red onion, peeled and thinly sliced, 1 red or yellow chilli, seeded and finely diced, 2 radishes, thinly sliced and juice of 3 limes.
