Dean Edwards served up tasty Moroccan Lamb Meatballs with herby Couscous cooked in a microwave on Steph’s Packed Lunch.
The ingredients are: 400g lamb mince, 1 tbsp onion granules, 1 heaped tsp garlic paste, 1 heaped tsp rose harissa and 1 tsp ground cumin.
For the tomato sauce: 250g tomato passata, 1 heaped tbsp. tomato puree, 1 roasted red pepper from a jar, sliced (approx. 70g), 1 tbsp rose harissa, 1 tsp onion granules, 1 tsp garlic paste, 1 heaped tsp ground cumin, 1 heaped tsp caster sugar and 1 x 400g tin chickpeas, drained.
To serve: Herby couscous.
