John Whaite served up a delicious strawberry and apricot tart with ice cream and custard on Steph’s Packed Lunch.
The ingredients for the pastry are: 225g plain flour, ½ tsp fine salt, 150g unsalted butter and 75g Greek yoghurt.
For the filling: 100g caster sugar, plus extra for the top, 2 tbsp Bird’s custard powder, 250g strawberries, roughly chopped (hulled weight), 8 apricots, destoned and roughly chopped and 1 egg yolk, beaten to glaze.
