John Whaite served up a tasty veggie quesadilla with aubergine, tomatoes and guacamole on Steph’s Packed Lunch.
The ingredients for the filling are: 2 tbsp olive oil, 1 red pepper (about 200g), deseeded and finely diced, 200g aubergine, finely diced, 1 small red onion, peeled and finely chopped, 3 plum tomatoes, roughly chopped, 2 garlic cloves, peeled and minced, 1 tbsp tomato puree and 1 tsp chipotle paste.
For the guacamole: 2 ripe avocados, soft, but not too soft, 1 lime, juiced, 1 plum tomatoes, roughly chopped, 2 spring onions, finely sliced and Small handful fresh coriander, roughly chopped.
To assemble: 4 wholemeal tortillas, 150g double Gloucester cheese, coarsely grated and Sea salt flakes.
