Marcus Bean served up a tasty Mexican feast with pork chillies corn tortillas and guacamole on This Morning.
The ingredients for the tostada filling are: 2 tbsp rapeseed oil, 1 onion, finely diced, 3 cloves of garlic, finely chopped, 1 medium sweet pepper, chopped, 2 tbsp smoked paprika, 2 tsp ground cumin, 500g pork mince, 1 x 400g tin of chopped tomatoes, 1 tsp tomato puree, 100ml pork stock , 1 x 400g tin of red kidney beans and 2 tsp Chipotle chilli paste.
For the guacamole: 3 ripe avocados , Juice of 1 lime, ½ red onion, finely diced, 1 medium vine tomato, finely chopped and Fresh coriander, chopped.
To serve: 200g sour cream , ½ iceberg lettuce, finely sliced, 300-400g mixed cherry tomatoes, halved, Grated mature cheddar, Pickled chillies and Corn tortillas.
