Theo Michaels chicken curry with red peppers recipe on Steph’s Packed Lunch

Theo Michaels served up a tasty chicken curry with bell peppers on Steph’s Packed Lunch.

The ingredients are: 30ml olive oil , 1 onion, peeled and diced , 2 inches ginger, peeled and grated , 2 cloves garlic, peeled and crushed or finely chopped, 1 red chilli, chopped , 1tsp turmeric , 1tsp garam masala , 1tsp ground cumin , 1tbsp curry powder , 600g chicken thigh skinless and boneless, diced , 1 x 400g can cream of tomato soup , 250ml chicken stock , 1 red pepper, deseeded and diced and 2tbsp fresh coriander chopped, for garnish.
