Marcus Bean served up a tasty chicken traybake with potatoes, seasonal greens and a garlic and Parmesan cream on This Morning.
The ingredients are: A little oil for frying, 800-850g chicken thighs (5-6 thighs), 20g butter, 1 medium onion finely diced, 3-4 cloves garlic finely sliced, 2 sprigs fresh thyme, 100ml white wine (optional), 100ml chicken stock, 200ml double cream, 50g freshly grated Parmesan, Juice half a lemon, 100g podded broad beans, fresh or frozen, 150g fresh or frozen peas, 6 stems of English asparagus, cut into 1-2cm pieces, 100g fresh spinach, Fresh chives, finely chopped and Salt and pepper.
For the potatoes: 1 kilo potatoes good for roasting (Maris piper, Rooster), 100ml rapeseed oil, Sea salt flakes, 2 sprigs rosemary, 2 sprigs thyme and 5-6 cloves garlic (sliced).
