Mitch Lane served up a tasty cheesy chorizo pasta on Steph’s Packed Lunch.
The ingredients are: 300g dried fusilli , 38 thin slices of chorizo, chopped , 1 red onion, peeled and finely sliced , 1 red chilli, finely sliced, deseeded for a milder flavour , 5 garlic cloves, peeled and finely chopped , 400g tin tomatoes , 2 x 125g balls mozzarella and 20g parsley, finely chopped, plus extra to serve.
