John Whaite served up a delicious Rhubarb, White Chocolate and Thyme Traybake on Steph’s Packed Lunch.
The ingredients are: 250g unsalted butter, softened, 250g golden caster sugar, Leaves from 5 sprigs of fresh thyme, 5 large free-range eggs, 1tsp vanilla bean paste or extract, 300g plain flour, 1 ½ tsp baking powder, 1 ¼ tsp salt, 200g fresh rhubarb, cut into 1 ½ cm chunks and 180g white chocolate chips.
For the topping: 100g unsalted butter, softened, 100g icing sugar, 200g full-fat cream cheese, cold, Freeze-dried raspberries pieces, to sprinkle and 50g chopped white chocolate, to sprinkle.
