Crystelle Pereira served up a delicious chai tres leches cake on Sunday Brunch.
The ingredients are: 34 green cardamom pods, 18 cloves, 5g coconut oil, 6 large eggs, ¼ tsp cream of tartar, 160g caster sugar, ½ tsp vanilla bean paste, ½ tsp sea salt, 125g plain flour, ½ tsp baking powder, 2 tsp ground cinnamon and 2 tsp ground ginger powder.
For the chai steeping mixture: 410ml full-fat milk, 4 English breakfast tea bags, 1/4 tsp black pepper, 1½ cinnamon sticks, 1 tsp ground ginger, 150ml double cream and 400g condensed milk.
For the cream topping: 15g desiccated coconut, 240ml double cream, 1 tsp vanilla paste, 80ml coconut milk and ½ tsp ground cinnamon.
