Georgina Hayden a tasty vegetarian spanakorizo with spinach, leek and lemon rice on Jamie’s £1 Wonders.
The ingredients are: 2 onions, 2 cloves of garlic, 1 leek, 4 spring onions, 75 ml olive oil, 400 g frozen spinach, 2 tablespoons tomato purée, 1 heaped teaspoon sugar, ¼ teaspoon smoked paprika, 200 g long grain rice , rinsed, 500 ml passta, 2 vegetable stock cubes, 1 lemon and ½ a bunch of dill (10g).
