Miguel Barclay served up a tasty aubergine parmigiana with oregano, cheddar and lettuce on Jamie’s £1 Wonders.
The ingredients are: 2 aubergines, olive oil, 2 teaspoons dried orgeano, 2 small red onions, 500 g tomato passata, 200 g mature Cheddar cheese , grated and ½ a round lettuce.
