James Martin serve up a tasty scallop tartare with lime poppadom and yuzu dressing on James Martin’s Saturday Morning.
The ingredients are: 6 scallops, thinly diced, 2 poppadoms, vegetable oil, for frying and 1 lime, zested.
For the dressing: ½ lime, juiced, 15ml yuzu juice and 25ml soy sauce.
For the mayonnaise: 3 egg yolks, 1 tbsp Dijon mustard, 1 lime, juice only and 200ml herb oil.
To serve: sliced nori sheets, chilli fonds and micro coriander.
