Ainsley Harriott Potato Rosti with Black Pudding, Poached Egg and Crispy Maple-Sriracha Bacon recipe on Ainsley’s Fantastic Flavours

Ainsley Harriott served up tasty Potato Rosti with Black Pudding, Poached Egg and Crispy Maple-Sriracha Bacon for brunch on Ainsley’s Fantastic Flavours.

The ingredients are: 8 rashers thick-cut streaky bacon, 2 tbsp maple syrup, 1 tbsp sriracha sauce, plus extra to serve, 1 tsp soy sauce, 2 large baking potatoes (approx. 800g in total), ½ red onion, peeled and finely sliced, 1 tsp fresh thyme leaves, chopped, 2 tbsp light olive oil or vegetable oil, 2 tbsp butter, more if needed, 4-8 slices of black pudding, 4 eggs, poached to your liking and 1 tsp snipped chives, to serve (optional).
