Freddy Forster creamy peanut chicken with jollof rice recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty West African style creamy peanut chicken with jollof rice on Steph’s Packed Lunch.

The ingredients for the chicken are: 8 chicken drumsticks, 3tbsp vegetable oil, ¼ tsp turmeric and Squeeze of lemon juice.

For the spicy peanut sauce: 1 large onion, peeled and finely sliced, 2 cloves garlic, peeled and finely chopped, 200g sweet potato, peeled and diced, 1 stick of celery, chopped, 2 pieces of spring onions, chopped, ¼ tsp scotch bonnet, diced, 2tbsp smooth peanut butter, Pinch of chicken stock cube, 200ml cold water, 400ml full fat coconut milk, 3tbsp white cabbage, finely shredded, Good squeeze of lemon juice and Few leaves of coriander.

For the Jollof rice: 2tbsp vegetable oil, 1 onion, peeled and finely chopped, ¼ tsp garlic, peeled and finely chopped, Pinch ground ginger, Pinch dried thyme, Pinch chilli powder, Pinch curry powder, Pinch cumin powder, 1 bay leaf, 300g long grain rice, ½ tbsp tomato puree and Chicken stock cube, dissolved in 200ml water.
