Jack Stein Tuscan bean stew with crispy bacon and kale recipe on Steph’s Packed Lunch

Jack Stein served up a tasty Tuscan white bean stew with crispy bacon and kale on Steph’s Packed Lunch.

The ingredients are: 2tbsp olive oil, 1 white onion, peeled and diced, 2 sticks of celery, diced, 100g pancetta, diced, optional, 2 carrots, peeled and diced, 2 cloves garlic, peeled and diced, 2 sprigs of thyme, 1 bay leaf, 1tbsp olive oil, 250g cavolo nero, 400g borlotti beans, drained, 400g tinned chopped tomato, 1tbsp balsamic vinegar, 1tsp soy sauce, 1tsp caster sugar, 2tbsp basil and 100g Parmesan cheese, grated.
