James Martin served up a tasty prawn cocktail with homemade mayonnaise and a Marie Rose sauce with brandy and tomato ketchup on James Martin’s Saturday Morning.
The ingredients for the mayo: 2 egg yolks, 1 tsp Dijon mustard, 300ml vegetable oil and 1 tsp vinegar.
For the Marie Rose sauce: mayo above, 1 tsp Worcestershire sauce, 4 dashes of Tabasco sauce, 25ml brandy, 75ml tomato ketchup, sea salt and freshly ground black pepper, 1 lemon.
For the prawn cocktail salad: 400g cooked prawns, peeled, 4 whole cooked prawns, shell on, for garnish, 1 butterhead lettuce, sliced, 1 punnet mustard cress and ½ tsp cayenne pepper.
