Bikers Blackberry fool with hazelnut biscuits recipe on Best of British

Si and Dave make blackberry fool with hazelnut biscuits on the Bikers Best of British foods.

The Bikers says: “These hazelnut biscuits are great with a cup of coffee or served on the side of this creamy autumnal fool.”

The ingredient for the biscuits are: 50g blanched hazelnuts or golden hazelnuts, 125g well softened butter, 150g caster sugar, ½ unwaxed lemon, finely grated zest only, 150g plain flour and ½ tsp baking powder.

For the fool: 600g fresh blackberries, hulled, 75g preserving sugar, 2-3 tbsp caster sugar, to sweeten, 1 tbsp fresh lemon juice, 300ml double cream, well chilled, 100g plain natural yoghurt and fresh mint leaves, to decorate.
