Gennaro Contaldo served up a delicious torta di mele (Italian apple cake) on Steph’s Packed Lunch.
The ingredients are: 3 eating apples, any type you have at home, 1 lemon, zested and juiced, 150g caster sugar, 2 large free-range eggs, 1tsp vanilla extract, 50ml sunflower or vegetable oil, plus extra for greasing, 200g plain flour, sifted, 16g baking powder, 200ml natural yogurt, 2tsp icing sugar and 1tsp ground cinnamon.
To serve: Mascarpone cream, double cream or custard.
