Freddy Forster calves liver with bacon mashed potatoes and onion gravy recipe on Steph’s Packed Lunch

Freddy Forster served up tasty calves liver with bacon mashed potatoes and onion gravy on Steph’s Packed Lunch.

The ingredients for the liver are: 200g or 2 slices of calves liver, 20g plain flour, 2tbsp vegetable oil and 25g unsalted butter.

For the mashed potato: 500g peeled potato, cut into chunks, 50ml whole milk and 50g unsalted butter.

For the onion gravy: 1tbsp vegetable oil, 3 onions, peeled and finely sliced, ¼ tsp caster sugar, 2tbsp balsamic vinegar, 350ml beef stock and 25g unsalted butter.

To serve: 2 rashers crispy streaky bacon and 6 fresh sage leaves, fried.
