Chris Baber served up a tasty prawn and coconut curry with rice on Steph’s Packed Lunch.
The ingredients are: 2tbsp vegetable oil, 1 stick cinnamon, 8 x curry leaves, 1 green chilli, deseeded and sliced, 2 white onions, peeled and finely sliced, 4 cloves garlic, peeled and grated, 4 cm ginger, peeled and grated, 1tsp turmeric, 1tsp mild chilli powder, 2 x 400ml full fat coconut milk, 2tbsp tamarind paste, 2tsp caster sugar, 400g raw prawns, removed from shells and prepped, 1 lemon and Small bunch coriander, finely chopped.
To serve: Basmati rice.
