Liam Charles showcased his tasty mouse shaped crumpets with cheese filling for a technical challenge on Junior Bake Off.

The ingredients are: 2 tsp caster sugar, 7g fast action yeast, 375g strong white bread flour, 1 tsp bicarbonate of soda, 1 tsp salt, 400ml whole milk, warmed and 2 tbsp yeast extract.

For the cheese sauce: 50g Red Leicester cheese, 15g unsalted butter, ½ tbsp plain flour, 170ml evaporated milk, 25g parmesan, grated, salt and pepper, to season.
