Nisha Katona served up tasty ginger beer onion bhajis with coriander and mint chutney on Saturday Kitchen.
The ingredients for the ginger beer onion bhajis are: 260g gram flour, ¼ tsp bicarbonate of soda, 1 tsp nigella seeds, 1 tbsp white poppy seeds, 2 tsp ajwain seeds, 300ml ginger beer, 1½ tsp salt, 1 lemon, juice only, 1 tsp ground coriander, 1 tsp ground cumin, ¼ tsp chilli powder, 1 onion, chopped into medium chunks, 2 garlic cloves, finely chopped, 150g broccoli and green beans, chopped into chunks, 2 tbsp chopped fresh coriander and vegetable oil, to fry.
For the coriander and mint chutney: 1 small bunch fresh coriander, leaves and stalks roughly chopped, 1 small bunch fresh mint, 1 green chilli, seeds removed, finely chopped, ¼ white onion, 2cm piece of fresh root ginger, peeled, 1¼ tsp ground cumin, 1 tsp ground coriander, ½ lemon, juice only, 3 tsp sugar and ½ tsp salt.
