Lorcan Spiteri served up tasty prawn toast with chilli jam on Sunday Brunch.
The ingredients are: 500g raw peeled prawns, ginger, finely grated, 3 garlic cloves, crushed, 1 tsp light soy sauce, 1 tsp fish sauce, 1 tsp rice vinegar, 1 red chilli, finely chopped, 2 tbsp coriander, chopped, black and white sesame seeds, 6 slices white bread and 300ml vegetable oil, for shallow frying.
For the chilli jam: 100g palm sugar, 3 garlic cloves, chopped, 2 red chillies, chopped, ½ red pepper, seeds removed, chopped, ginger, finely chopped, galangal, finely chopped, 2 lime leaves, finely chopped, 1 lemongrass, finely chopped, ½ small bunch coriander, roughly chopped, 40ml rice vinegar and 20ml fish sauce.
