Simon King and Dave Myers served up a delicious Aztec chocolate avocado mousse with coconut milk and stem ginger on The Hairy Bikers Go Local.
The ingredients are: 2 ripe avocados, peeled, stones removed and roughly mashed, 1 piece stem ginger, roughly chopped, ½ lime, grated zest and juice, 100g dark chocolate (70% cocoa solids), broken into pieces, 50g honey (or syrup from the stem ginger), 100ml reduced-fat coconut milk, 30g cocoa powder, 1 tsp ground cinnamon, 1 tsp ground ginger, ¼ tsp ground allspice and ¼ tsp cayenne pepper.
To serve (optional): 1 piece stem ginger, finely sliced.
