Freddy Forster served up a tasty prawn curry with cauliflower couscous and butternut squash on Steph’s Packed Lunch.
The ingredients are: 2tbsp vegetable oil, Good pinch of cumin powder and turmeric, ½ tsp caraway seeds, optional, 1tbsp medium curry paste, 120g red onion, peeled and cut into medium dice, 1 garlic clove, peeled and finely sliced, 225g butternut squash, peeled and cut into medium dice, ½ red pepper, cut into medium dice, Salt/pepper, 400ml coconut milk + 25ml water, 150g packet of cold-water prawns, 120g frozen peas, ½ lemon, juiced and 2tbsp coriander leaves.
For the cauliflower couscous: 1 large cauliflower, Salt/Pepper and 25g unsalted butter.
