James Martin salmon and prawn toasts with ponzu dressing and chilli jam recipe on James Martin’s Saturday Morning

James Martin served up tasty salmon and prawn toasts with ponzu dressing and chilli jam for the festive season on James Martin’s Saturday Morning.

The ingredients for chilli jam are: 100g caster sugar, 50ml white wine vinegar, 25ml water, 2 chillies, chopped, few sprigs of mint and coriander, chopped.

For the prawn toast: 4 slices white bread,300g raw king prawns, peeled, 1 tsp soy sauce, 1 egg white, 1 lime, juice and zest and 50g sesame seeds.

For the salmon toast: 4 slices white bread, 300g salmon, 1 egg white, 1 tsp soy sauce, 2 tbsp coriander and 50g sesame seeds.

To serve: Lime wedges and 50ml ponzu.
