John Torode and Lisa Faulkner served up a tasty salmon terrine with cucumber salad for the festive season on John and Lisa’s Weekend Kitchen.
The ingredients are: 600g smoked salmon , 125g crème fraîche , 325g cream cheese , Juice of 1 lemon and a little grated zest , 1 tbsp grated fresh horseradish (or horseradish cream) , 200g hot smoked salmon, 1 tbsp small capers in brine, Good handful of chopped herbs of choice (eg. dill, parsley, chives), Vegetable oil, for greasing, Salt and pepper.
To serve: Crisp breads and Wedges of lemon.
For the Cucumber salad: 1 cucumber, Good handful of chopped herbs (dill, parsley, chives), Red wine vinegar and Salt and pepper.
