John Whaite served up a tasty beef stew with cheese biscuits using store-cupboard ingredients on Steph’s Packed Lunch.
The ingredients for the stew are: 600g beef shin, diced, 1tbsp plain flour, 2tbsp sunflower oil, 1 onion, peeled and chopped, 2 large carrots, peeled and cut into bite-sized chunks, A few sprigs of flat leaf parsley, stalks and leaves finely chopped, reserve the leaves for the cheese biscuits, 2-star anise, 2 bay leaves, 6 sprigs thyme, 1 x 295g tin of condensed tomato soup, 440ml can of Guinness, 1 beef stock cube, crumbled and 350ml water.
For the cheese biscuits: 225g plain flour, 1½ tsp baking powder, 40g cold unsalted butter, 50g cheddar cheese, grated, 75g natural yogurt, 75g half fat crème fraîche, 1tsp lemon juice and 1 medium free-range egg, beaten, to glaze.
