James Strawbridge served up a delicious Crom mess (a take om Eaton mess) with smoked strawberries, prosecco sorbet and clotted cream on Strawbridge over the Drawbridge.
The ingredients for the smoked strawberries are: 200g strawberries, hulled and sliced, 2 tbsp applewood chips or peat and 1 tbsp golden caster sugar.
To serve: 4 tbsp good-quality raspberry jam, 4 tbsp clotted cream, 1 tbsp chopped pistachios, prosecco sorbet or strawberry ice cream, brown fondant icing shaped into antlers (optional) and edible gold leaf (optional).
