Freddy Forster served up a tasty Greek lamb meatball traybake with stuffed pita bread on Steph’s Packed Lunch.
The ingredients for the meatballs are: 500g lamb mince, Pinch of turmeric, ½ tsp ground cumin, 1 whole medium egg, 2tbsp Greek yogurt, 40g fresh/dried breadcrumbs, 1tbsp Dijon mustard and 2tbsp coriander, chopped.
For the traybake: 2tbsp olive oil, 1 red onion, peeled and cut into wedges, 1 yellow pepper, cut into chunks, 6 new potatoes, cut into quarters, 2 clove garlic, sliced, 1 green courgette, cut into thick slices, ½ small aubergine cut into chunks, 3-4 sprigs of fresh thyme, 1 tin peeled cherry tomatoes (400g), 135ml water, 1tbsp olive oil and Few leaves of basil.
For the honey oil: 1tbsp olive oil, ½ tbsp honey and Zest of ¼ lemon.
For the stuffed pita bread: 2 medium sized pita bread, 180g feta cheese, ½ red onion, peeled and very finely sliced, 1tbsp mint, roughly chopped, Cracked black pepper, ½ tbsp extra-virgin olive oil and ¼ tsp of oregano.
