Mary Berry tomato and garlic pistou tart with Parmesan and brie soft cheese recipe on Mary Berry: cook and Share

Mary Berry served up a tasty tomato and garlic pistou tart with a rich Parmesan cheese pastry and brie soft cheese filling on Mary Berry: cook and Share.

The ingredients for the cheese pastry: 175g plain flour, plus extra for dusting, 115g butter, cubed, 55g Parmesan, grated and 1 egg, beaten.

For the filling: 1kg medium-sized ripe tomatoes, thickly sliced, 4 tbsp olive oil, 5 garlic cloves, halved, 3 tbsp sun-dried tomato paste and 115g Brie, cut into thin slices.

For the pistou: 2 garlic cloves, 2 tsp sea salt, Small bunch (15g) of basil, Small bunch (15g) of mint, leaves picked, 75ml olive oil and A squeeze of fresh lemon juice.
