Mary Berry served up a tasty prawn stir fry with coconut, chilli, ginger and courgette ribbons on Mary Berry: Cook and Share.
The ingredients are: A large knob of butter, 600g large raw prawns, shells removed and de-veined, 1 tbsp sunflower oil, 2 medium courgettes, peeled into ribbons, 1 red chilli, deseeded and finely chopped, 115g baby spinach and Small bunch of coriander, chopped.
For the sauce: 160ml coconut cream, zest and juice of ½ lime, 1 tsp fish sauce, 1 tbsp sweet chilli sauce, 1 tsp grated fresh root ginger, 1 garlic clove, crushed and 2 tsp cornflour.
