Allegra McEvedy served up tasty chilli con chicken with nacho topping on Steph’s Packed Lunch.
The ingredients are: 400g sweet potatoes, 400g baking potatoes, 20ml rapeseed oil, 75g frozen diced onion, defrosted, 75g carrot, peeled and cut into batons, 2 cloves garlic, peeled and chopped, 1 tsp paprika, 1 tsp smoked paprika, 1 tsp oregano, 30g tomato puree, 300g chicken thighs, diced, 150g cannellini beans, 200g chopped tomatoes, 300ml vegetable stock, 1-2tbsp honey, 75g mild cheddar cheese, 40g soft tortilla, crushed and 1 green chilli, seeds removed and finely chopped, optional.
