Summer is here, the sun is shining and chef Phil Vickery goes out doors to serves up a few tasty BBQ dishes including chicken korma curry in a bag and Barque Chicken thighs with peanut sauce on This Morning.
The ingredients for his chicken curry are: 2 tbsp vegetable oil, ¼ tsp dried chilli flakes, ½ tsp ground turmeric, ½ tsp ground cumin, ¼ tsp garam masala, ½ onion, finely chopped, 2 tsp finely chopped fresh ginger, 2 cloves garlic, chopped, 100mls lager, pinch or two chicken stock cube, 2 tbsp double cream, ½ tsp sugar, 1tsp cornflour and 2 small chicken breasts, cut into 1cm pieces.
For the BBQ chicken: 8 Chicken drumsticks, skin on, 1 carrot, 1 onion, peeled and chopped, I chicken stock cube, Salt and freshly milled pepper, 1 tbspn Sesame oil, 1 tbspn Worcestershire sauce, Pinch chilli powder and Pinch of ground cumin.
