Ainsley Harriott apricot and blueberry pizza with amaretto cream recipe on Ainsley’s Good Mood Food

Ainsley Harriott served up a delicious sweet apricot and blueberry pizza with amaretto cream on Ainsley’s Good Mood Food.

The ingredients for the pizza dough are: 250g strong white bread flour, ½ tsp salt, 1 tbsp caster sugar, 1 tsp fast action yeast, 30g unsalted butter, diced and 180ml water.

For the Topping: 100g soft light brown sugar, 1 tsp ground allspice, zest of a lemon, 2 tbsp semolina, 800g firm apricots, stoned and halved, 200g blueberries and 20g butter diced.

For the Amaretto Cream: 250ml double cream, 2 tbsp icing sugar, 1-2 tbsp Amaretto liqueur and 2-3 crunchy amaretti biscuits, crushed (optional).
