Nico Reynolds served up tasty South American mojo lamb steaks with spring leeks, coconut and almonds on This Morning.
The ingredients are: 4 x lamb steaks, 1/2 an inch thick.
For the Mojo: 1 medium onion, roughly chopped , Juice of 2 oranges & zest of one, Juice of 3 lime & zest of one , 3 cloves of garlic or handful wild garlic , Handful of fresh mint , Handful of coriander , 3 green chillies (mild) and Salt and pepper.
For the grilled leeks: 4 medium sized leeks, whites of, 50g of desiccated coconut, toasted and 100g of almonds (roughly chopped), toasted.
For the buttered leeks: Knob of butter , 4 medium sized leeks, the greens of, finely sliced and 3 tbsp desiccated coconut, toasted.
