Omar Allibhoy served up tasty trout with chorizo, chickpeas and pickled red onions on Saturday Kitchen.
The ingredients are: 1 tbsp olive oil, 2 x 160g loch trout fillets, salt and freshly ground black pepper.
For the garnishes: 1 small red onion, thinly sliced, 2 tbsp sherry vinegar, 2 tbsp olive oil, 2 garlic cloves, sliced, 50g fresh smoked chorizo, diced, 1 tsp finely chopped red chilli, 200g chickpeas, drained and rinsed, 150g sugar snap peas, sliced, 1 cured chorizo, thinly sliced, 1 tbsp finely snipped fresh chives, large drizzle extra virgin olive oil, salt and freshly ground black pepper.
