Lisa Goodwin-Allen served up tasty Salt Aged Beef with Marrowbone Crust, Smoked Pancetta and Mushroom Bourguignon Sauce on James Martin’s Saturday Morning.
The ingredients are: 4 x Aged beef fillet (approx 170g).
For the marrowbone Chrust: 125g whipped salted butter, 100g marrowbone, 50g small lilliput capers, 1dsp chopped chives, 1 egg yolk and Good pinch of salt.
For the Bourguignon sauce: 100g Diced Onion, 60g Diced Smoked Pancetta, 1 Whole large eringi mushroom diced, ½ tsp Roast garlic, 100g Red wine sauce, 1 tsp Chopped Parsley, Good splash of red verjus and Good pinch of salt.
To garnish: Mushroom puree.
