James Martin served up tasty Chinese style BBQ pork ribs (char siu pork ribs) with a sweet and sour barbecue sauce on James Martin’s Saturday Morning.
The ingredients are: 2kg pork ribs, 1 onion, 2 carrots, 1 bulb garlic, 1 small bunch parsley, Water to cover, A few peppercorns and 10 star anise.
For the sauce: 250g hoisin sauce, 20 ml fish sauce, 1 tsp pepper flakes, 250g honey, 25ml mirin, 20g 5 spice, 75ml sake, 75ml dashi vinegar, 75ml soy sauce, 15g dashi powder, 1 tbs red magic, 100g minced garlic and 50g minced ginger.
