Marcus Wareing served up tasty BBQ rib-eye steak with a honey and ale glaze, blackened onions, jacket potatoes and a herb green sauce on Marcus Wareing’s Tales from a Kitchen Garden.
The ingredients are: 1.7kg bone-in rib-eye steak, 500g small Charlotte potatoes, washed and dried, large knob butter, 6 onions, cut in half, peeled, roots left on, olive oil, salt and freshly ground black pepper.
For the spice rub: 1 tbsp cracked black pepper, 1 tbsp paprika, 1 tbsp dried oregano and 1 tbsp Maldon sea salt.
For the glaze: 330ml ale, 100g honey, 50g brown sugar, 2 tbsp mustard and 2 tbsp white wine vinegar.
For the green sauce: 1 bunch flatleaf parsley, 1 bunch coriander, handful fresh mint leaves, 2 garlic cloves, crushed, 2 green chillies, seeds removed, chopped, 100ml olive oil and 2 tbsp sherry vinegar.
