Freddy Forster served up a tasty chicken, butternut squash and chickpea stew with coconut cream on Steph’s Packed Lunch.
The ingredients are: ½ butternut squash, peeled and cut into medium dice pieces, 1 x large chicken breast or 4 boneless and skinless chicken thighs, salt and pepper, to taste, Pinch of turmeric, Pinch of curry powder, 2 x tablespoon vegetables oil, 1 x small onion, finely sliced, 25g butter, 1 x tin cooked chick peas, drained but reserve the chickpea water, 400ml coconut milk, 1 chilli, Handful of spinach and 1/4 bunch fresh coriander.
200g cooked couscous, to serve.
