James Martin served up grilled lamb chops with broccolini and salsa Verde with Dijon mustard and sherry vinegar on James Martin’s Saturday Morning.
The ingredients are: 12 lamb chops, Salt and pepper, 400g broccolini, Few sprigs of thyme, chopped, 1 lemon juice and zesta and 50 ml olive oil.
For the dressing: 2 tbs sherry vinegar, 1 tbs Dijon mustard, 1 shallot, peeled and diced, 1 small bunch coriander, chopped, 1 small bunch mint, chopped, 1 small bunch dill, chopped, 1 small bunch parsley, chopped, 2 tbs capers, 1 lemon juice and zest and 50ml olive oil.
To serve: 200ml thick Greek yoghurt and Few sprigs of mint and coriander.
