John Whaite served up a delicious and quick to make Christmas fruit cake with brandy on Steph’s Packed Lunch.
The ingredients are: 150g dried sweetened cranberries, 250g dried seedless prunes, roughly chopped, 250g glace cherry halves, 150g currants, 175g dried seedless dates, roughly chopped, 400ml Guinness or other stout, 75ml brandy, 225g dark brown Muscovado sugar, 225g salted butter, 4 medium free-range eggs, beaten, 225g plain flour, 200g walnuts, chopped, zest of 1 large lemon, zest of 1 large orange, 150g mixed peel and 2tsp mixed spice.

Hi Theresa i use gas cooker so would advise you to do it at Gas mark 2 on the middle shelf. I bake them every year but i am going to try his. Good luck.
Preheat the oven to 140C, gas mark 1.
