Ainsley Harriott served up tasty and spicy breakfast hash with nduja, peppers, garlic, sweet potato and kale on Ainsley’s Good Mood Food.
The ingredients are: 2-3 large Yukon Gold or red potatoes, peeled and cut into small chunks, 1 large sweet potato, peeled and cut into small chunk, 140g curly kale, tough stems removed and chopped, 1 tbsp olive oil, 1 onion, chopped, 1 red pepper, de-seeded and cut into strips or chunks, 1 garlic clove, minced, 1 tbsp butter, 50g ‘nduja, 4 eggs, a handful of flat-leaf parsley, chopped(optional), sea salt and freshly ground black pepper.
